Ultimate Quarantine Soup

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 tablespoon chopped fresh ginger
  • 2 teaspoons ground turmeric, plus extra to sprinkle (optional)
  • 1 teaspoon cumin seeds, crushed
  • Pinch dried chilli flakes, plus extra to sprinkle (optional)
  • 400g can tomato polpi or crushed tomatoes
  • 3 tsp vegetable or chicken stock powder
  • 4 dried bay leaves
  • 400g can lentils, drained, rinsed
  • 400g can chickpeas, drained, rinsed
  • 150g frozen spinach
  • Juice of half a lemon, plus extra wedges to serve
  • Greek yoghurt, to dollop
  • Parsley to serve

Method

Step 1

Heat the oil in a large saucepan over high heat. Add the onion. Reduce heat to low and cook, stirring occasionally, for 5 minutes or until softened. Add the garlic and ginger and cook, stirring, for 1 minute or until aromatic. Add the turmeric, cumin and chilli and stir to coat.

Step 2

Add the tomato to the saucepan. Fill the empty tomato can with water and add to the saucepan. Add another can of water. Stir in the stock powder and bay leaves. Increase heat to high and bring to the boil. Reduce heat to low and simmer, uncovered for 15 minutes. Stir through the lentils and chickpeas. Simmer for a further 20 minutes or until thickened.

Step 3

Add the spinach and cook, stirring occasionally, for 5-10 minutes or until spinach has thawed. Add the lemon juice and season.

Step 4

Divide among serving bowls and serve with yoghurt, extra turmeric, chilli and a sprinkle of parsley, if desired.
